Pork Tenderloin w/ Potatoes n Apples

Pork chops with apples, pears and maple syrup. Pictures, Images and Photos


3 whole, boneless fresh pork tenderloins, about 1 3/4 lbs.
Salt to taste, if desired
Freshly ground pepper to taste
2 tbsp. corn, peanut or vegetable oil
1 tsp. dried or chopped fresh rosemary leaves
1 onion, about 1/4 lb., peeled and cut in half crosswise
8 red, waxy potatoes, about 1 lb.
2 Golden Delicious apples
1/4 c. fresh or canned chicken broth
2 tbsp. finely chopped parsley

1. Preheat the oven to 450 degrees.
2. Sprinkle the tenderloins with salt and pepper. Put the corn oil in a pan large enough to hold the whole tenderloins in one layer. Sprinkle with rosemary and turn the pork in the mixture to coat it all over. Place on top of the stove. Arrange the onion, cut side down, around the pork. Heat the pork, turning to make certain the pieces do not stick. Cook until the pieces are lightly browned all over. Place them in the oven.

3. Meanwhile, peel the potatoes and put them in a saucepan with water to cover and salt to taste. Bring to a boil and cook 5 minutes.

4. Peel, core and quarter the apples as the potatoes cook.

5. Drain the potatoes and arrange them around the meat. Turn the pork and continue baking for total of 30 minutes.

6. At the end of that time, scatter the apple quarters around the meat and return the pan to the oven. Continue baking 15 minutes.

7. Remove the meat to a warm serving platter. Add the broth to the pan. Stir and bring to a boil about 5 minutes; remove from heat. Cut the pork into crosswise pieces and serve with the potatoes, apples and the sauce spooned over. Serve sprinkled with chopped parsley. Yield: 4 to 6 servings.

Red Dragons-desire, passion, fire, rage. These dragons literally eat darkness, and transmute it to light. Intensity is only matched by the amount of fire these dragons wield.

Gold Dragons-The golden ray, the creative spark. The keepers of phi. They speak the language of the heart. Art and music are brought here by gold dragons. Gold dragons can be channeled for healing.

Silver Dragons-Reflection, they inhabit the meridians of the universe. These dragons come around when we look into ourselves. Perspectives is a good word for silver dragons, and they see every perspective from every reflection.

White Dragons-They maintain the purity of the collective, the grace connection. They often are guardians. These dragons can also be channeled for healing.

Blue Dragons-They are about the consciousness, communication, and mental awareness.

Orange Dragons-The will is the color orange. These dragons bring in strength, confidence, and bravery. Fire dragons by nature, they move with a quickness. They don't inflate ego's, they merely instill confidence.

Brown Dragons-Physicality , and all it's properties. They are masters of physics, on all realities. Shaping matter (shape shifting), gravity, physical form. Sphere's is a keyword to understanding the brown dragon.

Purple Dragon-The purple dragon, sometimes referred to as "the ancient one", is the embodiment of the highest level of the dragon collective (the wisdom). (the earth dragon also appears to me as purple, however many see green)

Green Dragon-The planet dragon, or earth dragon. Material in a big sense, however green is the color of life in the big picture. Lessons of "the material", are a big part of the way they teach.

Yellow Dragons-they get knowledge and information transferred. They are linked to the subconscious (but aren't that), and usually bring in the information that is needed from one side to the other.

Mini Frittatas/West Coast Luncheon Salad/Croutons

Mini Frittatas

Cooking spray
8 large eggs or 1 pint egg beaters
1/4 cup milk
1/4 tsp salt
1/3 cup freshly grated Parmesan, Asiago or Jack cheese
2 Tbs chopped fresh Italian parsley leaves
Optional: chopped turkey or ham, shredded potato, or chopped veggies such as zucchini, mushrooms and spinach


1.Preheat oven to 375 degrees F.

2.Mix together the grated cheese and chopped veggies, if using. Season with salt and pepper.

3.Spray the muffin tins with nonstick cooking spray.

4.Using a teaspoon, fill the 24 mini-muffin cups halfway with the cheese mixture.

5.Using a 1/4 cup measuring cup, fill the cups to just below the edge with the beaten eggs.

6.Bake until golden, about 12 minutes.

7.Remove from the oven and let cool before removing from the pan.

8.Store in an airtight container and use in school lunches throughout the week.



1 cup fresh mushrooms, sliced
1 cup cooked shrimp
3/4 teaspoon tarragon leaves, crushed
1 teaspoon garlic powder
1/5 cup Italian or herb dressing
1 head loose leaf lettuce
3 ripe avocados
1 backet cherry tomatoes

Combine mushrooms, shrimp, tarragon, garlic and dressing.
Chill for 1 hour. Arrange lettuce leaves on individual salad
plates. Peel, halve and pit avocados. Place a half-avocado
on each plate, and fill with salad mixture. Garnish with
cherry tomatoes.


Making your own salad croutons is simple-all it takes are a
few slices of day-old (older) bread. Homemade croutons are
much fresher and more flovorful than the package kind. They
accent many types of salads. Once you have tasted the
following, you will never again spend money on storebought
croutons. Any croutons that aren't used within a day or two
should be stored in a cool place in an opaque, airtight
container. They can also be frozen.

For Garlic Croutons:
Cut crusts from 5 slices firm white bread or 6 slices French
bread. Dice bread into 1/2-inch cubes. In a large frying
pan over medium heat, heat 2 tablespoons each butter or
margarine and olive oil or vegetable oil. Mix in 1 clove
garlic (minced or pressed). Add bread cubes, stirring until
well coated with butter mixture. Transfer bread cubes to a
rimmed baking sheet and spread in single layer. Bake in a
300* oven until lightly browned and crisp. cool.
Makes about 2 cups.

Cheddar Cheese Popcorn/ Striped Delight

Cheddar Cheese Popcorn
1/4 c. butter
1/4 c. grated cheddar cheese
3 c. hot popped corn

Melt butter; stir in cheese. Pour over popcorn and stir until every
kernel is coated.

Makes 3 cups

Striped Delight

Prep Time: 20 min Total Time: 4 hr 40 min Makes: 24 servings

35 OREO Cookies
6 Tbsp. butter, melted
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
2 Tbsp. cold milk
1 tub (12 oz.) COOL WHIP Whipped Topping, thawed, divided
3-1/4 cups cold milk
2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding

PROCESS cookies in food processor until fine crumbs form. Transfer to medium bowl; mix in butter. Press onto bottom of 13x9-inch dish. Refrigerate until ready to use.

WHISK cream cheese, sugar and 2 Tbsp. milk in medium bowl until blended. Stir in 1-1/4 cups COOL WHIP; spread over crust.

BEAT pudding mixes and 3-1/4 cups milk with whisk 2 min.; pour over cream cheese layer. Let stand 5 min. or until thickened; cover with remaining COOL WHIP. Refrigerate 4 hours.

No doubt the Wise Ones who once walked the hills of Appalachia where I now live gathered violets on the edge of the woodland to use in spells such as this: To ensure your love remains true; Pick six violets, all must be blue.
