Strawberry Glaze Pie/Apple Crisp/Apple Pie Cake

Yummy for summer :)


Strawberry Glaze Pie


9 inch baked pie shell
6 cups fresh strawberries, about 1 1/2 quarts
1 cup of sugar
3 tablespoons cornstarch
1/2 cup water
1 package (3oz.) cream cheese, softened

Bake pie shell. Mash enough berries to measure 1 cup. Stir together
sugar and cornstarch. Gradually stir in water and crushed strawberries.
Cook over medium heat, stirring constantly, until mixture thickens and
boils. Boil and stir 1 minute. Cool. Beat cream cheese until smooth;
spread on bottom of baked pie shell. Fill shell with remaining berries,
pour cooked berry mixture over top. Chill at least 3 hours or until set.

APPLE CRISP

4 c. peeled sliced apples
1/2 c. water (less for juicy apples)
3/4 c. flour
1 c. white or brown sugar
1 tsp. cinnamon
1/2 c. butter
1/4 tsp. salt

Butter a deep baking dish. Put in the pan 4 cups apples, 1/2 cup water (less for juicy apples). Mix with fork flour, brown or white sugar, cinnamon, butter, and salt. Pour over apples. Bake at 350 degrees about 30 minutes or until apples are tender

Apple Pie Cake

1 c. sugar
1/4 c. shortening
1 egg
1 c. flour
1/2 tsp. baking soda dissolved in 3 tbsp. water
2 1/2 c. chopped apples
1/4 tsp. Salt
1 tsp. Cinnamon
1/2 c. chopped walnuts
1/4 tsp. Nutmeg

Cream sugar and shortening. Add egg. Mix flour, spices and salt and add to above mixture. Add dissolved baking soda. Fold in nuts. Bake in 8 inch square pan at 350 degrees for 40 minutes or until brown. Serve with whipped cream sweetened with 2 tablespoons sugar and 1/4 teaspoon vanilla.
