Oven Fried Chicken/Oven Fried Zucchini Chips

Oven Fried Chicken

1 tbsp. margarine
2/3 c. Bisquick baking mix
1-1/2 tsp. paprika
1-1/4 tsp. salt
1/4 tsp. pepper
2-1/2 to 3-1/2 lb. fryer, cut up

Heat oven to 425 degrees. Melt margarine in 13 x 9 inch pan in oven. Mix
baking mix, paprika, salt and pepper; coat chicken. Place skin sides
down in pan (uncovered). Bake 35 minutes. Turn, bake about 15 minutes or
until done. 6 servings.

Oven Fried Zucchini Chips

3 med. zucchini
1/4 c. frozen egg substitute, thawed
2 tbsp. commercial reduced-calorie Italian dressing
1/2 c. fine, dry bread crumbs
2 tbsp. grated Parmesan cheese
1/8 tsp. freshly ground pepper
Vegetable cooking spray

Cut zucchini into 1/4 inch thick slices; set aside. Combine egg
substitute and Italian dressing in a small bowl; stir well. Combine
bread crumbs, Parmesan cheese and pepper in a small bowl; stir well. Dip
zucchini in egg mixture; dredge in bread crumb mixture. Place zucchini
on a baking sheet coated with cooking spray. Bake at 475 degrees for 5
minutes; turn and bake an additional 5 minutes or
until golden. Serve immediately.

Yield: 8 servings - 1/2 cup serving
