Gingerbread Cake, P/Butter Cups Cupcakes

Gingerbread Cake

1/3 c. butter

1/2 c. boiling water

1/4 c. sugar

1/2 c. molasses

1 egg, beaten

1 1/2 c. flour

1 tsp. baking soda

2 tsp. ginger powder

Combine butter and water; stir until melted. Add sugar, molasses and egg. Combine well. Combine flour, soda and ginger. Combine with other mixture. Pour into baking pan. Bake at 375 degrees for 20 minutes. Top with Cool Whip or icing.

Peanut Butter Cups Cupcakes

1 3/4 cups flour
1 1/4 cups firmly packed brown sugar
3 tsp baking powder
1 tsp salt
1 cup milk
1/3 cup shortening
1/3 cup peanut butter
1 tsp vanilla extract
2 large eggs
24 miniature milk-chocolate covered
peanut butter cups candies

Heat the oven to 350 F. Line 24 muffin cups with paper baking cups. In a large bowl, combine all the ingredients except the peanut butter cups candies at low speed until moistened. Beat for two minutes at medium speed. Fill the prepared muffin cups 2/3 full. Press a peanut butter cup candy into the batter until the top edge is even with the batter. Bake for 18-22 minutes or until the cupcakes spring back when touched lightly.

Yield: about 24 cupcakes

Ranchy Fish Fillets, Cola Chicken, Healthy Potato Salad, Strog Style Chops, Best Grilled Burger

Simple Ranchy Breaded Fish Fillets

3/4 cup Italian seasoned bread crumbs
1 (1 ounce) package dry Ranch-style dressing mix
2 1/2 tablespoons vegetable oil
1 pound tilapia fillets
2 teaspoons butter

1. Place the bread crumbs in a bowl. In a shallow dish, mix the
dressing mix and oil to form a paste. Coat the tilapia fillets with the
paste, then dredge in the bread crumbs to lightly coat.

2. Melt the butter in a skillet over medium heat. Place the fillets in
the skillet, and cook 5 minutes on each side, or until golden brown and
easily flaked with a fork.



"COLA " CHICKEN

4 boneless, skinless chicken breasts
1 cup Catsup
1 can (12 oz) Diet Cola
Cooked rice
Put chicken in non-stick skillet. Pour catsup and diet cola over the
top. Bring to a boil. Cover, reduce heat and cook for 45 minutes.
Uncover, turn up heat and continue to cook until sauce becomes thick and
adheres to the chicken. It turns into the most incredible BBQ sauce.
Serve over rice.



Healthy Potato Salad

2 med. potatoes, peeled and cut into 1/2" cubes
1 hard cooked egg, sliced
1/4 cup chopped celery
1/4 cup chopped bell pepper
1/4 cup chopped onion
2 tbsp. chopped pimento
1 tbsp. mustard
4 tbsp. lite mayonnaise

Cook the potatoes in boiling water for 8-10 mins. until tender but still firm
(be careful not to overcook!) Drain and cool.
Mix all ingredients together and chill before serving. 4 servings.



Stroganoff-Style Pork Chops

4 boneless butterfly pork loin chops (1 inch thick)
2 T. vegetable oil
1 large onion, chopped
8 medium fresh mushrooms, sliced
1/4 c. water
2 t. prepared mustard
1/2 t. salt
1 T. all-purpose flour
1/2 c. sour cream
Hot cooked noodles

In a large skillet over medium heat, brown chops in oil for 5 - 6
mins. on each side. Remove and keep warm. In the drippings, saute
onion and mushrooms until tender.

Stir in the water, mustard and salt; bring to a boil. Return chops to
pan. Reduce heat; cover and simmer for 15 - 20 mins. or until pork is
tender. Remove chops and keep warm.

Combine flour and sour cream until smooth; add to the skillet. Bring
to a boil; cook and stir for 1 - 2 mins. or until slightly thickened.
Serve pork chops and mustar-mushroom sauce with noodles.

Yield: 4 servings



Best Grilled Burgers:


Ingredients
1 beaten egg
1/4 cup fine dry bread crumbs
2 tablespoons finely chopped onion
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound lean ground beef
4 hamburger buns, split and toasted


Directions
1. In a large mixing bowl, combine the egg, crumbs, onion, Worcestershire sauce, garlic powder, salt, and pepper. Add beef; mix well. Shape meat mixture into four 3/4-inch-thick patties.
2. Place the shaped patties on the rack of an uncovered grill directly over medium coals. Grill the burgers, uncovered, for 14 to 18 minutes or until done and the juices run clear, turning once halfway through the grilling time. Serve grilled patties on toasted hamburger buns. Makes 4 servings.
*Note: To test the temperature of the preheated coals, place your hand above the coals at the height the food will be cooked. Start counting and if you need to remove your hand after 4 seconds, the coals are medium.
