Bread Pudding w/ Rum Sauce

Bread Pudding with Rum Sauce

3 cups white bread, cubed
2 cups milk
1 Tbsp. butter
4 eggs
2/3 cups sugar
1/2 cup raisins
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 tsp. vanilla

Rum Sauce:

1 cup milk
2 Tbsp. brown sugar
1 Tbsp. cornstarch
1 Tbsp. dark rum

Place bread in an 8 x 8 inch baking dish. Combine milk and butter in a saucepan and cook over lo heat until butter is melted, allow it to cool slightly. Beat eggs and add to milk mixture. Add sugar, raisins, cinnamon, nutmeg and vanilla and pour over bread cubes. Bake for 30 minutes at 325 degrees, pour rum sauce over bread and bake an additional 10 minutes.

The Skinny: Use light bread, low fat milk and your favorite egg and sugar substitutes.

Swiss n Chicken Casserole

Swiss n Chicken Casserole

Prep Time: 20 minutes
Total Time: 1 hour
Makes: 6 servings, about 1 cup each

4 cups chopped cooked chicken or turkey
2 cups croutons
1 - 1/2 cups Kraft Shredded Swiss Cheese
1 cup sliced celery
2/3 cup Miracle Whip or Miracle Whip Light Dressing
1/2 cup milk
1/4 cup chopped onion

PREHEAT oven to 350°F. Mix all ingredients.
SPOON into 2-qt. casserole.
BAKE 40 min. or until heated through

Soft & Chewy Oatmeal Cookies, Grandma's Sour Cream Coffee Cake

Soft & Chewy Oatmeal Cookies

3/4 cup butter flavored Crisco
1-1/4 cups light brown sugar, packed
1 egg
1-1/2 tsp. vanilla
1/3 cup milk
3 cups old-fashioned oatmeal (canuse quick oats)
1 cup flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1 cup raisins
1 cup chopped walnuts

Combine first 5 ingredients. Beat at medium speed until well blended.
Mix in next 5 ingredients at low speed---just until blended. Stir in
raisins and nuts by hand. Drop by spoonfuls on lightly greased (or
parchment paper lined) cookie sheets. Bake at 375*** for 10 to 12 minutes or
until lightly browned around the edges. Cool 2 minutes before removing
to cooling racks to finish cooling.

Grandma's Sour Cream Coffee Cake

1 stick margarine
1 cup sugar
2 eggs
1 cup sour cream
1 tsp baking soda
2 cups flour
1 tsp baking powder
1 tsp vanilla

TOPPING
1/4 cup sugar
1 Tbsp cinnamon
2 Tbsp chopped nuts

Preheat oven to 350. Sift baking powder, flour, and baking soda. Mix
in
sour cream. Set aside. Cream margarine and sugar. Add eggs, mix and
then add
vanilla. COmbine all the cake ingredients together. Set aside. In a
small
bowl, combine all topping ingredients and set aside. Put half of the
batter
into a greased 9x9 pan. Sprinkle a layer of topping, Put in
remaining
batter. Sprinkle with remaining topping. Bake at 350 for 45 minutes.
Cheick
at 30 minutes to make sure topping is not too brown. If it is, cover
loosly
with tin foil. Serve warm.

Balsamic Rib-Eye Steak With Bleu Cheese Sauce, Easy Pineapple Bread

Balsamic Rib-Eye Steak With Bleu Cheese Sauce:

1 cup balsamic vinegar
1/4 cup red wine (merlot is nice in this)
1 tablespoon fresh ground black pepper
1/2 teaspoon kosher salt
4 rib eye steaks
1/2 cup balsamic vinegar
1/4 cup crumbled blue cheese

Combine 1st four ingredients in a ziploc bag or shallow pan.
Add steaks to marinade.
Marinate for 1-2 hours, turning steaks in marinade frequently.
Grill steaks to desire doneness.
I grill for 3-5 minutes on each side for medium-rare/medium doneness.
While steaks are grilling, combine vinegar and bleu cheese to a creamy
consistency.
Serve sauce as a condiment to steaks.

Easy Pineapple Bread


1 can (approx. 9 ounces) crushed pineapple in syrup
2 -1/2 cups biscuit baking mix
1/3 cup granulated sugar
4 TBSP butter, room temperature
2 eggs
1/2 cup chopped pecans or walnuts
Granulated sugar mixed with a little cinnamon, optional

Preheat oven to 350 deg.

Grease and flour a 9 x 5 x 3-inch loaf pan. Drain pineapple well,
reserving
3 TBSP of the syrup. In a mixing bowl, combine baking mix, sugar,
butter,
eggs, reserved syrup, and pineapple; blend with mixer on low speed
until
blended, about 1 & 1/2 to 2 minutes. Stir in chopped pecans or
walnuts. Spoon batter
into the prepared loaf pan. If desired, sprinkle with a little
cinnamon-sugar. Bake for about 50 to 60 minutes, or until a wooden
pick or cake tester
inserted in center comes out clean.
Cool in pan for 10 minutes; remove to rack to cool completely. This
bread is
great toasted with cream cheese for breakfast.

Three-Cheese Pasta Bake, Blonde Peanut Butter Chocolate Chip Brownie

Three-Cheese Pasta Bake

1 (16 oz.) pkg. ziti
2 (10 oz.) containers refrigerated Alfredo sauce
1 (8 oz.) container sour cream
1 (15 oz.) container ricotta cheese
2 lg. eggs, lightly beaten
1/4 c. grated Parmesan cheese
1/4 c. chopped fresh parsley
1 1/2 c. mozzarella cheese

Prepare ziti according to package directions; drain and return to pot.
Stir together Alfredo sauce and sour cream; toss with ziti
until evenly coated. Spoon half of mixture into a lightly
greased 13x9 inch baking dish.
Stir together ricotta cheese and next 3 ingredients; spread
evenly over pasta mixture in baking dish. Spoon remaining
pasta mixture evenly over ricotta cheese layer; sprinkle
evenly with mozzarella cheese.
Bake at 350 degrees for 30 minutes or until bubbly. Makes 8 to 10
servings

Blonde Peanut Butter Chocolate Chip Brownie


2-1/4 cups sugar
1-1/2 cups flour
5 eggs
3.4 cups shortening
3/4 cups peanut butter
1-1/3 tsp vanilla
3/4 tsp salt
1-1/2 tsp baking powder
1-1/2 cups choc chips
3.4 cups chopped peanuts, pecans or walnuts. My favorite is dry
roasted
peanuts.
Cream sugar, shortening, Add peanut butter and eggs, dry ingred. Stir
in
chips and nuts. Put in greased 15 x 10 pan. Bake 350 degree oven for
30 minutes

Easy Clam Chowder, Chicken & Dressing Casserole, Pineapple Angel Food Cake

Clam Chowder

2 - 6 1/2 oz - cans minced clams in juice
1 small onion, diced
2 medium potatoes, diced
1 tsp oil
1 - 8 oz- bottle of clam juice
3 cups lowfat milk
salt and pepper to taste

Drain clams. Set juice and clams aside. Heat oil in saucepan for 1
minute
on med-low heat. Add onion and cook for 2 minutes, stirring
frequently. Add
potatoes, juice from clams, and the bottle of clam juice. Stir well.
Cover the pot partially. Cook over medium heat for 15 minutes.
Stirring
occasionally. Reduce heat to low. Add clams. Slowly pour in the
milk, stirring
occasionally. Cover pot partially, cook 10 minutes longer. Add salt
and
pepper. Makes 4 servings.

Chicken & Dressing Casserole

1 3 pound chicken
1 can cream of mushroom soup
1 can cream of celery soup
2 cups chicken broth
1/2 cup butter or margarine, melted
1 8 ounce package herb seasoned stuffing mix
1 cup shredded cheese

Cook chicken; cool, debone, and cut meat into bite size pieces.
Mix soups and broth; add chicken to the mixture. Add butter or
margarine to dressing mix. Combine chicken mixture with the dressing mixture.
Place in a 2 to 2 1/2 quart casserole and bake at 350F for 30 minutes.
Top with shredded cheese during the last 5 minutes if desired.

Serves 6

PINEAPPLE ANGEL FOOD CAKE

1 angel food cake mix
1 large can crushed pineapple (15 oz or 16 oz) do not drain

Combine dry cake mix and pineapple, pour into bundt or angel food pan
and
bake about 30-45 minutes.

Serve with low fat cool whip if desired. Makes a quick and very easy
cake for last minute dessert.

Caramel Fudge Cake, Bananas in Orange Sauce, Cheesecake Choco Chip Squares

Caramel Fudge Cake

1 chocolate cake mix
14 oz package caramels, unwrapped
1/2 cup margarine
1 can sweetened condensed milk
1 cup chopped pecans

Preheat oven to 350. Prepare cake as directed. Pour 2
cups batter into greased 9 x 13 pan. Bake 15 minutes.
Meanwhile, in heavy saucepan, over low heat, melt caramels
and butter with sweetened consensed milk. Stirring until
smooth. Spread evenly over cake. Spread remaining
batter over caramel mixture.
Top with nuts. Return to oven., bake 30-35 minutes
longer. Cool. Garnish as desired. It is really
good with cool whip on top.

Baked Bananas in Orange Sauce

Prep and total time 30 minutes
Serves two
Taken from taste of home 12-01-06


2 or 3 medium firm bananas
2 tbsp butter melted
¼ c orange juice
2 tbsp brown sugar
2 tsp grated orange peel
Vanilla ice-cream

Cut each banana in half lengthwise and place cut
side down in a greased 8 inch square baking
dish. Brush with butter and bake uncovered at 350 degrees for 10
minutes.
Combine the orange juice, brown sugar, and orange
peel and pour over bananas. Bake 10 minutes longer and serve with
ice-cream.

Cheesecake Filled Chocolate Chip Cookie Squares

2 pkg. refrigerated slice and bake choc. chip cookies
2 (8oz) pkg. cream cheese
2 eggs
1 C sugar
2 tsp vanilla

Slice 1 pkg. of choc. chips cookies and place on the bottom of a cookie
sheet. (Just fill the whole bottom of it, if they touch it does not
matter)

Mix together the cream cheese, eggs, sugar and vanilla pour over. Slice
the other roll of cookies and place on top. Bake at 350 degrees for 1/2
hr.

Let cool a bit and then refrigerate.

Easiest Mac and Cheese, Cake Mix Cookies, Chicken Fried Steak

Easiest Mac and Cheese

INGREDIENTS:
1 pound of elbow macaroni
1 cup of milk
4 to 6 slices of American cheese
a dozen Ritz crackers
salt and pepper
dash of paprika
1. Cook and drain elbow macaroni and let it cool slightly.
Meanwhile, heat the oven to 350 and grease a 13- by 9-inch baking pan
or a large casserole dish.

2. Now have your child spoon a third of the pasta into the pan, then
pour in 1/2 cup of milk and cover it all with 4 to 6 slices of
American cheese. Add two more layers of pasta, milk, and cheese in
the same manner.

3. Next, crush a dozen Ritz crackers in a ziplock plastic bag. Add
salt and pepper and a dash of paprika, then sprinkle the crumbs over
the top layer of pasta and cheese.

4. Bake for 30 to 40 minutes or until bubbly. Serves 6 to 8.

Cake Mix Oatmeal Cookies


INGREDIENTS:
1/2 cup butter
2 eggs
1 (18.5 ounce) package yellow cake mix
2/3 cup quick cooking oats
1/2 cup finely chopped walnuts

DIRECTIONS:
Preheat the oven to 375 degrees F (190 degrees C). Line baking
sheets with parchment paper.
In a large bowl, mix butter and eggs until light and fluffy. Stir in
cake mix, quick oats, and walnuts. Roll dough into walnut sized
balls. Place cookies onto the prepared baking sheet, and flatten
slightly with the bottom of a glass that has been buttered and
dipped in sugar.
Bake for 8 to 10 minutes in preheated oven, or until golden brown.
Allow cookies to cool on baking sheet for 5 minutes before
transferring to a wire rack to cool completely.



Cake Mix Choc/PB Cookie

INGREDIENTS:
2 eggs
1/3 cup water
1/4 cup margarine
1 cup peanut butter
1 (18.25 ounce) package yellow cake mix
2 cups semisweet chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the eggs, water, margarine and
peanut butter. Stir in the cake mix and blend well. Finally, fold in
chocolate chips. Drop by rounded spoonfuls onto the prepared cookie
sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to
cool on baking sheet for 5 minutes before removing to a wire rack to
cool completely.

Chicken Fried Steak

3 pounds round steak, tenderized
1 cup flour
1 tsp. salt
1 tsp. garlic powder
2 tsp. Old Bay seasoning or paprika if you can't find Old Bay
Fresh ground pepper
2 eggs, beaten
1/2 cup milk
Vegetable oil

Gravy

1 Tbsp. butter
6 Tbsp. Flour
3 cups hot milk
Salt and pepper

Cut steak into 6 pieces. Combine flour, salt garlic powder, Old Bay or paprika and pepper on a plate. Combine eggs and milk in a bowl. Dip steak in egg/milk mixture then coat with flour mixture. Cook steaks in hot oil in a heavy skillet. Remove steaks and keep warm. Add butter to pan and mix with drippings. Add four and cook and stir until flour browns. Add hot milk and stir until thickened. Season with salt and pepper and pour over warm steaks. Serve with hot rice.

The Skinny: Use your favorite egg substitute and low fat milk.

Choco Ice Cream Sandwich Cake

CHOCOLATEY ICE CREAM SANDWICH CAKE


INGREDIENTS:
16 ice cream sandwiches, softened
1 16-ounce container chocolate Cool whip topping
1 12-ounce jar chocolate fudge topping
2 bags (about 16 ounces M&M candies)
1/4 cup chocolate syrup

DIRECTIONS:
Layer 8 of the sandwiches in a 9x13 baking dish side
by side, press down a little to join them. Spread evenly
1/2 of the Cool Whip and 1/2 of the topping. Sprinkle 1/2
of the candy over layer. Repeat with another layer of
same. Drizzle with chocolate syrup to finish. Cover and
freeze 3 hours or until firm. Slice with a serrated knife.

Yield: 12 Servings
